Picual

Single variety · Early harvest

Spain's most widely grown variety. Slightly pointed shape, characteristic bitterness and pungency, pronounced herbaceous aromas. Very stable through long cooking — a great match for chocolate.

An extra virgin olive oil with intense green fruitiness (+6). Aromas of wild field herbs come through, at the same intensity as the green of tree leaves and aromatic plants such as thyme, tarragon and fennel. On the palate it's dense, with great body, and bitterness and pungency stay in balance, perfectly harmonised (+4/5). It shows flavours of rocket, nasturtium, watercress, green tomato, pistachio, wild apple, artichoke heart and fig leaf. It's long, with a light lingering taste of succulent herbs such as stonecrop and navelwort, and a salty, spicy touch of fresh pepper.
